Why is it that a fully developed potato can continue to grow vines or roots and flowers?

I put a store bought potato in a glass of water. I placed toothpicks in the potato and submerged one half. Within days tiny white roots sprouted out of the bottom and green vines came out of the top. Weeks later the glass of water is thick with white vines and three feet hight vines have shot out of the top and are decorated with pink flowers. How is this possible?

Why is it that a fully developed potato can continue to grow vines or roots and flowers?
The simplest answer is that's how potatoes reproduce. The potato is the "seed" of the plant. You have created an environment that they need to reproduce. It won't las too long, though. Once the nutrients in the potato are consumed by the plant, it will die.

A fully developed potato or any bulb will become a seed for their continuation and survival.

Now that you know how to sprout a potato; you can split it in peaces keeping the white sprouted part intact, buy yourself a couple of 10+ gallon container, fill it with 50/50 percent dirt and compost, plant about 2 rooted pieces in each container and watch them grow! Before you know, you'll be eating fresh harvested potatoes right from your porch, back or front yard =)

Link below shows how to make compost with the stuff we throw in the barbage in anyways:
